Description
Cheesy BBQ Chicken Dip is a creamy, smoky, oven-baked appetizer loaded with tender shredded chicken, melted cheddar, barbecue sauce, and bold flavor. Perfect for parties and game day.
Ingredients
2 tablespoons olive oil
1 1/2 cups shredded cooked chicken
1 medium red onion, diced
1 red bell pepper, seeded and diced
1/3 cup sliced banana peppers, diced
1/4 cup green onions, sliced
8 ounces cream cheese, softened
1/2 cup sour cream
1/4 cup ranch dressing
1/4 cup barbecue sauce, plus more for topping
1 1/2 cups shredded cheddar cheese
1/2 teaspoon smoked paprika
Tortilla chips, for serving
Instructions
1. Preheat oven to 375°F.
2. Sauté red bell pepper in olive oil for 3–4 minutes until softened. Set aside.
3. Cook red onion over medium-low heat for 8–10 minutes until softened and lightly caramelized.
4. Mix cream cheese, sour cream, ranch dressing, and barbecue sauce until smooth.
5. Fold in chicken, peppers, onion, smoked paprika, half the green onions, and half the cheese.
6. Spread into baking dish and top with barbecue sauce.
7. Sprinkle remaining cheese over top.
8. Bake uncovered 20–25 minutes until hot and bubbly.
9. Garnish with remaining green onions and serve warm.
Notes
Use freshly shredded cheese for best melting.
Can be assembled ahead and refrigerated before baking.
Let rest 5 minutes before serving for ideal texture.
