Description
These cheesy barbecue chicken bites combine smoky BBQ chicken, melted cheddar and mozzarella, and flaky puff pastry to create the ultimate crowd-pleasing appetizer.
Ingredients
1 sheet puff pastry, thawed
1 cup finely chopped cooked chicken
1/4 cup barbecue sauce, plus extra for drizzling
1 tablespoon sour cream
1/4 cup shredded mozzarella cheese
1/4 cup shredded sharp cheddar cheese
1/4 cup diced red onion
2 tablespoons freshly chopped cilantro
Salt and black pepper, to taste
Nonstick cooking spray
Instructions
1. Preheat your oven to 400°F. Lightly coat a mini muffin tin with nonstick cooking spray.
2. Gently roll out the puff pastry on a lightly floured surface to smooth it. Cut the pastry into 12 equal squares and press each square into the wells of the mini muffin tin.
3. Bake for 8 minutes, just until the pastry begins to puff and lightly set.
4. While the pastry bakes, combine the chopped chicken, barbecue sauce, and sour cream in a mixing bowl. Stir until evenly coated and season with salt and black pepper.
5. Remove the muffin tin from the oven and gently press the center of each pastry with the back of a spoon to create a small well.
6. Spoon the chicken mixture evenly into each pastry cup and top with mozzarella and cheddar cheese.
7. Return to the oven and bake for 8–10 minutes until the pastry is golden and the cheese is melted and bubbly.
8. Carefully remove from the muffin tin, drizzle with extra barbecue sauce, and sprinkle with diced red onion and cilantro before serving.
Notes
Serve warm for the best texture and flavor.
Rotisserie chicken works perfectly for this recipe.
The bites can also be enjoyed at room temperature for parties or potlucks.
