Description

Bold, tender salmon bites baked with smoky Cajun seasoning and a caramelized finish. Perfect for bowls, salads, tacos, and quick dinners.


Ingredients

4 skinless salmon fillets, cut into 1-inch cubes (about 1.21.4 lb total)

2 teaspoons paprika

3/4 teaspoon kosher salt

1 teaspoon onion powder

1 teaspoon garlic powder

1/4 teaspoon dried thyme

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional)

2 1/2 teaspoons brown sugar

2 tablespoons olive oil


Instructions

1. Preheat your oven to 460°F (or 430°F if using convection).

2. Line a baking sheet with foil and crumple it lightly before smoothing.

3. Mix paprika, salt, onion powder, garlic powder, thyme, black pepper, cayenne, and brown sugar.

4. Add salmon cubes and drizzle with olive oil; toss to coat.

5. Arrange cubes on the prepared baking sheet with space between pieces.

6. Bake for 12 minutes without flipping.

7. Remove from sheet immediately and serve warm.

Notes

For extra browning, broil for 1 minute at the end, watching closely. Serve in bowls, salads, tacos, or with roasted vegetables.
