Ingredients

  • 2 cups cherry tomatoes, halved

  • 1/2 teaspoon salt

  • 1/2 teaspoon sugar

  • 2 tablespoons olive oil

  • 5 ounces plain full-fat yogurt

  • 2 tablespoons basil pesto

  • 4 ounces burrata, patted dry

  • Grilled bread, fresh basil, additional salt and pepper for serving


Instructions

  • Preheat the oven to 400°F. Place the cherry tomatoes on a small baking sheet and season with salt and sugar. Drizzle with olive oil.

  • Roast for about 20 minutes, or until the tomatoes are softened and lightly caramelized. Set aside to cool slightly.

  • In a bowl, stir together the yogurt and pesto until smooth. Adjust seasoning with a pinch of salt if needed.

  • Spread the pesto yogurt mixture onto a shallow serving dish.

  • Tear the burrata into pieces and place it over the yogurt, allowing the creamy interior to spread across the surface. Season with salt, pepper, and a small drizzle of olive oil if desired.

  • Add the roasted tomatoes on top and garnish with fresh basil.
