Description

Spicy buffalo chicken bites coated in a buttery hot pepper sauce and served with creamy homemade blue cheese dip. Perfect for game day snacks or party appetizers.


Ingredients

2 pounds boneless chicken breast or boneless chicken thigh pieces, cut into bite-size pieces

3 tablespoons unsalted butter, melted

4 tablespoons hot pepper sauce

1 tablespoon paprika

1/2 teaspoon salt

1/2 teaspoon cayenne pepper

1/4 teaspoon black pepper

1/2 cup sour cream

1/2 cup crumbled blue cheese

1/2 cup mayonnaise

1 tablespoon white vinegar

1 clove garlic, minced

Celery sticks (optional)


Instructions

1. Cut the boneless chicken into bite-size pieces and place them in a large bowl.

2. In another bowl stir together melted butter, hot pepper sauce, paprika, salt, cayenne pepper, and black pepper.

3. Remove about 2 tablespoons of the marinade and set it aside for finishing later.

4. Add chicken pieces to the remaining marinade and toss until fully coated. Let sit for about 30 minutes.

5. Preheat the broiler and place chicken on a rack over a baking pan.

6. Broil 8–10 minutes, turn the pieces, and broil another 8–10 minutes until cooked through.

7. Combine sour cream, blue cheese, mayonnaise, vinegar, and garlic in a blender and blend until smooth.

8. Refrigerate the dip until ready to serve.

9. Toss cooked chicken with the reserved marinade for extra flavor.

10. Serve with celery sticks and blue cheese dip.

Notes

Chicken thighs provide extra juiciness while chicken breast offers a leaner option.

Adjust cayenne or hot sauce to control spice level.

Serve immediately for the best flavor and texture.
