Buffalo Chicken Tortilla Pinwheels are creamy, spicy, no-bake party appetizers made with shredded chicken, cheese, and hot wing sauce rolled in soft tortillas and sliced into bite-sized spirals.
Ingredients
8 ounces cream cheese, softened
1/2 cup hot wing sauce or cayenne pepper sauce
1/4 cup crumbled blue cheese
1 cup shredded Colby-Jack cheese (about 4 ounces)
1/4 cup finely chopped green onions
1 pound cooked chicken breast, shredded
5 large flour tortillas (about 10 inches in diameter)
Instructions
1. In a medium mixing bowl, beat the softened cream cheese until smooth and fluffy.
2. Add the hot wing sauce, crumbled blue cheese, shredded Colby-Jack cheese, and chopped green onions. Mix on low speed until evenly combined and creamy.
3. Fold in the shredded chicken until fully coated.
4. Lay one tortilla flat and spread about 3/4 cup of the mixture evenly over the surface, leaving a small border.
5. Roll the tortilla tightly without squeezing out the filling. Repeat with remaining tortillas.
6. Place rolls seam-side down, cover tightly, and refrigerate for 2 to 4 hours.
7. Trim ends and slice into 1-inch pinwheels. Serve chilled.
