Description
Buffalo Chicken Stuffed Mini Peppers combine tender chicken, creamy cheese, and bold buffalo flavor in a bite-sized baked appetizer.
Ingredients
12 mini sweet bell peppers
8 ounces cream cheese, softened
2 cups shredded cooked chicken
1/2 cup buffalo-style hot sauce
1 cup shredded cheese, divided
1 teaspoon garlic powder
Instructions
1. Preheat your oven to 400°F.
2. Slice each pepper in half lengthwise and remove the seeds and membranes.
3. In a medium bowl, blend the cream cheese, shredded chicken, hot sauce, 1/2 cup of the shredded cheese, and garlic powder until smooth and fully combined.
4. Arrange the pepper halves cut-side up in a 9×13-inch baking dish.
5. Spoon the chicken mixture evenly into each pepper half.
6. Cover the dish with foil and bake for 20 minutes.
7. Remove the foil, sprinkle the remaining cheese over the peppers, and bake for an additional 5 minutes, or until the cheese is melted.
Notes
Adjust the level of buffalo sauce to control heat. Rotisserie chicken works well for convenience. For a crispier top, broil the peppers for 1 minute after baking.
