Description

A spicy, creamy chicken filling packed into warm garlic baguettes for a quick and satisfying dinner.


Ingredients

2 garlic baguettes (about 7 oz each)

2 tablespoons oil

2 chicken breasts, cut into small pieces (about 12 oz total)

1 tablespoon Cajun seasoning

1/2 teaspoon black pepper

1 cup low-sodium chicken broth

1 onion, sliced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

2 garlic cloves, minced

2 jalapeños or medium-heat green chiles, sliced

4 tablespoons hot pepper sauce

1 tablespoon Worcestershire sauce

1 tablespoon apple cider vinegar

1/2 cup heavy cream

1/2 cup shredded cheddar cheese

3 scallions, chopped


Instructions

1. Preheat the oven to 350°F.

2. If using fresh baguettes, slice each lengthwise halfway; if frozen, bake first then slice.

3. Bake the baguettes on a sheet pan.

4. Warm oil in a skillet over medium-high heat.

5. Add chicken, Cajun seasoning, and pepper; cook 5 minutes.

6. Pour in chicken broth and stir.

7. Add onion, peppers, garlic, and half the jalapeños; cook 5 minutes.

8. Stir in hot sauce, Worcestershire, vinegar, and cream; simmer 4–5 minutes.

9. Open baked baguettes gently.

10. Fill each with chicken mixture and top with cheddar.

11. Bake 2–3 minutes until melted.

12. Slice and garnish with remaining jalapeños and scallions.

Notes

Adjust the heat by changing the jalapeños or hot sauce level. Store leftovers refrigerated and reheat in the oven.
