Description
Buffalo Chicken Pretzel Bites combine spicy shredded chicken, creamy cheese filling, and soft homemade pretzel dough. Served with blue cheese dressing, they’re the ultimate party appetizer.
Ingredients
Blue Cheese Dressing:
1/3 cup mayonnaise
1/3 cup sour cream
1/4 cup buttermilk
2 tablespoons whole milk
1 tablespoon white vinegar
1/4 teaspoon black pepper
4 ounces crumbled blue cheese
Buffalo Chicken Pretzel Bites:
1 fully cooked boneless, skinless chicken breast, shredded
4 ounces cream cheese, softened
2 celery stalks, finely chopped
2 tablespoons cayenne pepper sauce
1/2 teaspoon garlic powder
1/4 teaspoon kosher salt
1/8 teaspoon black pepper
2 1/4 teaspoons active dry yeast
3/4 cup warm water
2 1/2 cups all-purpose flour
1/2 teaspoon kosher salt
1 tablespoon olive oil
3 quarts water
2/3 cup baking soda
1 large egg, beaten
2 tablespoons coarse sea salt
Celery sticks, for serving
Instructions
1. Whisk together mayonnaise, sour cream, buttermilk, whole milk, vinegar, and black pepper. Fold in blue cheese and refrigerate.
2. Mix shredded chicken, cream cheese, celery, cayenne sauce, garlic powder, salt, and pepper until combined.
3. Stir yeast and warm water; let foam 5 minutes.
4. Combine flour and salt, add yeast mixture, mix and knead 5 minutes until smooth.
5. Place dough in oiled bowl, cover, and let rise 1–2 hours until doubled.
6. Shape dough into 1-inch thick square and cut into 2-inch squares.
7. Add 1 tablespoon filling to each, seal, and roll into balls.
8. Preheat oven to 425°F and line baking sheet with parchment.
9. Boil water, add baking soda carefully. Boil bites 1 minute in batches.
10. Transfer to baking sheet, brush with egg, sprinkle salt.
11. Bake 15 minutes until golden brown.
12. Serve warm with blue cheese dressing and celery sticks.
Notes
Seal dough tightly to prevent leaks.
Reheat leftovers in oven for best texture.
Dressing can be made one day ahead.
