Description
Buffalo Chicken Cheese Stuffed Rolls are warm, cheesy appetizers filled with shredded chicken, buffalo sauce, ranch dressing, and melted Colby Jack cheese baked inside soft dinner rolls.
Ingredients
2 cups shredded cooked chicken
1 cup buffalo sauce
3/4 cup ranch dressing
1/2 cup shredded Colby Jack cheese (for filling)
2 tablespoons chopped scallions (for filling)
1/2 cup unsalted butter, melted
2 tablespoons dried parsley
1 teaspoon minced garlic
12 sweet dinner rolls
3/4 cup shredded Colby Jack cheese (for topping)
2 tablespoons chopped scallions (for garnish)
Instructions
1. Preheat oven to 350°F and line a baking sheet with parchment paper.
2. In a large mixing bowl combine shredded chicken, buffalo sauce, ranch dressing, 1/2 cup shredded cheese, and chopped scallions.
3. In a small bowl mix melted butter, dried parsley, and minced garlic.
4. Arrange dinner rolls on the baking sheet and hollow out the center of each roll carefully.
5. Fill each roll with about 2 to 3 tablespoons of buffalo chicken mixture.
6. Brush the tops with garlic butter and sprinkle remaining cheese over the rolls.
7. Bake for 10 to 15 minutes until cheese is melted and rolls are warmed through.
8. Brush with remaining garlic butter, garnish with scallions, and serve warm.
Notes
Rotisserie chicken works well for quick preparation.
Adjust buffalo sauce amount to control spice level.
Serve with ranch or blue cheese dressing for dipping.
