Description

These BBQ Chicken Slider Bites combine shredded barbecue chicken, melted cheddar cheese, and crisp coleslaw on soft sweet rolls for the ultimate party appetizer.


Ingredients

12 sweet slider rolls, sliced horizontally with tops and bottoms kept attached

3 cups cooked shredded chicken

1/2 cup barbecue sauce

1 1/2 cups shredded cheddar cheese

2 tablespoons salted butter, melted

1 teaspoon ranch seasoning mix

2 cups prepared coleslaw


Instructions

1. Preheat your oven to 350°F. Line a large sheet pan with parchment paper. Place the bottom half of the slider rolls on one side of the pan and toast for 5 minutes to lightly crisp them. Remove from the oven.

2. In a mixing bowl, stir together the shredded chicken and barbecue sauce until evenly coated.

3. Spread the saucy chicken mixture evenly over the toasted bottom rolls. Sprinkle the shredded cheddar cheese over the chicken in an even layer. Place the connected tops of the rolls on the other side of the sheet pan.

4. In a small bowl, whisk together the melted butter and ranch seasoning. Brush this mixture generously over the tops of the rolls.

5. Return the pan to the oven and bake uncovered for 15 to 20 minutes, until the cheese is melted and the tops are golden brown.

6. Remove from the oven. Spoon an even layer of coleslaw over the melted cheese, then place the roll tops over the slaw. Slice into individual sliders and serve warm.

Notes

For best texture, add the coleslaw just before serving. Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven for best results.
