Description
Crispy, creamy, smoky, and a little spicy, these BBQ Chicken Jalapeno Popper Cupcakes make the perfect bite-size appetizer for parties and weeknight snacks.
Ingredients
30 small wonton wrappers
8 oz cream cheese, softened
2 cups shredded cheddar cheese, divided
1/4 cup barbecue sauce
3–4 slices turkey bacon, cooked and chopped
1–2 jalapeño peppers, finely chopped
3/4 cup cooked chicken, finely chopped
2 tablespoons chopped green onions
Instructions
1. Preheat the oven to 350°F.
2. In a mixing bowl, beat the cream cheese until smooth. Add 1 1/2 cups cheddar cheese, barbecue sauce, turkey bacon, jalapeños, chicken, and green onions. Mix until evenly combined.
3. Lightly coat a muffin pan with nonstick spray.
4. Place one wonton wrapper into each muffin cup, letting the corners extend upward. Add about 1 tablespoon of filling to each cup.
5. Top each with a second wonton wrapper, rotated so the corners do not overlap the first layer. Press gently to settle the filling.
6. Add another tablespoon of filling on top and spread lightly.
7. Sprinkle the remaining cheddar cheese over each cup.
8. Bake for 15–20 minutes, or until the edges are crisp and golden.
9. Let cool for 5 minutes before removing from the pan. Serve warm.
Notes
Adjust jalapeño heat to taste.
Reheat in the oven to restore crispness.
Store leftovers in an airtight container for up to 3 days.
