Description

BBQ Chicken Flatbread Bites combine smoky seasoned chicken, barbecue sauce, melted mozzarella, and crisp flatbread for a quick and satisfying dinner ready in 30 minutes.


Ingredients

1 large boneless, skinless chicken breast (about 10½ ounces), cut into small bite-sized pieces

1 tablespoon olive oil

1 teaspoon sweet paprika

1/2 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon sea salt

1/2 teaspoon freshly ground black pepper

4 flatbreads

1/4 cup barbecue sauce

1 cup shredded mozzarella cheese

1 small red onion, thinly sliced

1 small bell pepper, thinly sliced

1 tablespoon freshly chopped cilantro (optional)


Instructions

1. Place the chicken pieces in a bowl and toss with olive oil, sweet paprika, smoked paprika, garlic powder, onion powder, salt, and black pepper.

2. Heat a skillet over medium-high heat and cook the chicken for about 6 minutes until browned and fully cooked.

3. Preheat oven to 400°F and line baking sheets with parchment paper.

4. Spread barbecue sauce evenly over each flatbread.

5. Sprinkle mozzarella over the sauce, then add cooked chicken, red onion, and bell pepper.

6. Bake for 8 to 10 minutes until cheese is melted and edges are golden.

7. Remove from oven, garnish with cilantro if desired, slice, and serve warm.

Notes

Rotate baking sheets halfway through cooking if using two trays.

Reheat leftovers in the oven to maintain crispness.
