Description

Creamy Southern cheese spread made with sharp cheddar, mayonnaise, and pimientos. Perfect for sandwiches, crackers, and party appetizers.

Ingredients

1 (4-ounce) jar diced pimientos, drained

1 1/2 cups mayonnaise

1 teaspoon Worcestershire sauce

1 teaspoon finely grated yellow onion

1/4 teaspoon cayenne pepper

8 ounces extra-sharp yellow cheddar cheese, finely shredded

8 ounces sharp yellow cheddar cheese, shredded

Instructions

1. In a large bowl, stir together the drained pimientos, mayonnaise, Worcestershire sauce, grated onion, and cayenne pepper until smooth and well mixed.

2. Add the shredded cheddar cheeses and stir until everything is evenly combined.

3. Serve right away as a dip or spread, or cover and refrigerate until chilled.

4. Store in an airtight container in the refrigerator for up to 1 week.

Notes

Freshly shredded cheddar cheese creates the best texture and flavor.

Chilling the spread for an hour allows the flavors to blend together beautifully.

Serve with crackers, sandwiches, or fresh vegetables.
