Description
Crispy, flavorful zucchini cooked quickly in the air fryer with parmesan and savory spices. This easy vegetable side dish is healthy, quick to prepare, and perfect as a snack or appetizer.
Ingredients
2 to 3 medium zucchini, sliced into 1/4-inch thick half-moons or quarters (about 3 1/2 to 4 cups)
2 tablespoons grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon chili powder
1/2 teaspoon fine salt
1/4 teaspoon black pepper
2 tablespoons olive oil or avocado oil
Instructions
1. Preheat the air fryer to 400°F.
2. Slice the zucchini into pieces about 1/4 inch thick and place them in a large mixing bowl.
3. In a small bowl stir together the Parmesan cheese, garlic powder, onion powder, chili powder, salt, and black pepper.
4. Drizzle the oil over the zucchini pieces and toss until lightly coated.
5. Sprinkle the seasoning mixture over the zucchini and toss again until evenly seasoned.
6. Arrange the zucchini in the air fryer basket in a single layer.
7. Cook for 12 to 15 minutes until the edges are golden and the centers are tender.
8. Serve warm.
Notes
For crispier zucchini avoid overcrowding the air fryer basket.
Cook in batches if needed so hot air circulates around the slices.
Serve immediately for the best texture.
