Description

Tender air fryer artichokes served with a creamy lemon feta yogurt dip. This Mediterranean-inspired appetizer is bright, flavorful, and ready in just 30 minutes.


Ingredients

2 large artichokes, trimmed and halved

1 small lemon, cut into quarters

1 tablespoon olive oil

1/2 teaspoon fine salt

1/4 teaspoon black pepper

1/3 cup plain Greek yogurt

1/4 cup crumbled feta cheese

Zest of 1 small lemon

2 tablespoons fresh lemon juice

1 tablespoon olive oil

1 tablespoon milk or unsweetened non-dairy milk

1 garlic clove, finely grated or minced

1 tablespoon finely chopped fresh dill (or 1 teaspoon dried dill)

1 tablespoon finely chopped fresh mint (or 1 teaspoon dried mint)

1/4 teaspoon fine salt, plus more if needed

1/4 teaspoon black pepper


Instructions

1. Preheat the air fryer to 350°F.

2. Prepare the artichokes by removing the tougher outer leaves near the base. Cut off the bottom portion of the stem and slice off the top third of each artichoke.

3. Trim the sharp tips of the leaves using kitchen scissors. Slice each artichoke in half lengthwise.

4. Use a spoon to scoop out the fuzzy choke in the center of each half, leaving the heart intact.

5. Rub all cut surfaces with the lemon quarters to keep the artichokes from browning.

6. Drizzle the artichoke halves with olive oil and rub it evenly over the leaves and cut surfaces. Sprinkle with salt and pepper.

7. Place the artichokes cut-side down in the air fryer basket. Cook for 12–15 minutes, flipping halfway through.

8. They are ready when a leaf pulls away easily and the heart is tender when pierced with a knife.

9. While the artichokes cook, prepare the dip. In a small bowl, stir together the yogurt, feta cheese, lemon zest, lemon juice, olive oil, milk, garlic, dill, mint, salt, and pepper.

10. Taste the dip and adjust the seasoning if needed. Keep it chilled until ready to serve.

11. Serve the warm artichokes with the lemon feta yogurt dip on the side.

Notes

Fresh herbs provide the brightest flavor, but dried herbs can be used in smaller amounts.

Serve immediately while the artichokes are warm for the best texture.

Leftover dip can be used as a spread for sandwiches or wraps.
