Ingredients
1 (15-ounce) can refried beans
1 teaspoon taco seasoning
1 (14-ounce) container guacamole
1/2 cup salsa
1 1/2 cups dairy-free sour cream or plain dairy-free yogurt (optional)
1/2 cup cherry or grape tomatoes, quartered
3 green onions, thinly sliced
1 small yellow bell pepper, diced
1/3 to 1/2 cup dairy-free queso-style dip
Optional Garnishes:
Thinly sliced jalapeño peppers
Sliced black olives
Chopped fresh cilantro
Lime wedges
For Serving:
Tortilla chips
Mini bell peppers or assorted fresh vegetables for dipping
Instructions
1. Spread the refried beans evenly across a large serving platter to create the base layer. Sprinkle the taco seasoning evenly over the beans.
2. Gently spread the guacamole over the bean layer, smoothing it out to cover the surface.
3. Spoon the salsa over the guacamole and spread it into a thin, even layer.
4. Add the dairy-free sour cream by placing several small spoonfuls across the salsa. Use the back of a spoon or a knife to carefully spread it into a smooth layer.
5. Scatter the tomatoes, green onions, and diced yellow bell pepper evenly over the sour cream layer.
6. Drizzle the dairy-free queso-style dip across the top. Finish with any optional garnishes such as jalapeños, olives, cilantro, or lime wedges.
7. Serve immediately with tortilla chips or fresh vegetables for dipping.
Notes
For best presentation, assemble the dip in a wide shallow platter so the layers remain visible.
