This creamy vegan queso comes together in minutes using cashews, green chiles, and taco seasoning. It’s smooth, flavorful, and perfect as a dip or drizzle for tacos, burritos, and roasted vegetables.
Ingredients
1 cup raw cashews
1/2 cup water
1 can (4 ounces) diced green chiles
1 teaspoon taco seasoning
Pinch of salt, if needed
Instructions
1. Add the cashews, water, diced green chiles, and taco seasoning to a high-speed blender.
2. Blend until the mixture is completely smooth, creamy, and pourable. Stop to scrape down the sides if needed.
3. Taste and add a pinch of salt if you want a little more flavor.
4. Serve right away as a dip with chips, or spoon it over tacos, burritos, roasted vegetables, or wraps.
Notes
For the smoothest texture, use a high-speed blender.
If the sauce is too thick, add a splash of water and blend again.
This queso thickens slightly when refrigerated; stir or blend before serving.
