Description

All the cozy layers of lasagna in a single skillet, ready in just 20 minutes. This 20-Minute Chicken Lasagna Skillet is a cheesy, creamy, one-pan dinner that brings comfort food to your weeknight table—without turning on the oven.


Ingredients

12 ounces bowtie pasta, cooked according to package directions and drained

2 tablespoons olive oil

2 boneless, skinless chicken breasts, diced or thinly sliced

1 tablespoon Italian seasoning or herbes de Provence

Salt, to taste

1 medium onion, diced

2 garlic cloves, minced

1 cup low-sodium chicken broth

1 1/2 cups marinara sauce

1 teaspoon red pepper flakes

1/2 cup whole milk ricotta cheese

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese, plus more for serving

12 fresh basil leaves, chopped or thinly sliced


Instructions

1. Heat the olive oil in a large skillet over medium-high heat. Season the chicken with salt and the Italian seasoning.

2. Add the chicken to the hot skillet and cook, stirring occasionally, until golden and fully cooked. Transfer the chicken to a plate and set aside.

3. In the same skillet, add the diced onion and cook for about 3 minutes, stirring often, until softened. Add the garlic and cook for 30 seconds more.

4. Pour in the chicken broth and scrape the bottom of the skillet to loosen any flavorful bits. Let the broth simmer for 2 to 3 minutes, until slightly reduced.

5. Stir in the marinara sauce and red pepper flakes. Reduce the heat and let the sauce simmer gently for about 10 minutes.

6. Turn off the heat and add the cooked pasta, ricotta cheese, mozzarella, Parmesan, and basil. Return the chicken to the skillet.

7. Gently toss everything together until well combined and creamy. Taste and adjust seasoning as needed.

8. Serve warm, topped with extra Parmesan and fresh basil if desired.

Notes

For a spicier version, increase the red pepper flakes or use a spicy marinara.

You can substitute penne, rotini, or broken lasagna noodles for the bowtie pasta.

This dish reheats well—add a splash of water or broth before microwaving to keep the sauce creamy.
